Tunisian Chickpea Tajine

Revel in the warm flavors of Tunesia with this classic Tajine, with chickpeas, tomatoes, herbs and spices and harissa. Each bite is a burst of flavor, a taste of the warming, welcoming nature of North African culture. Vegan, low calory, low sodium and every next bite is better as the one before.

Catfish stew, black beans and jalapeno corn muffin

I will eat anything and everything that comes out of the water, I once said. That definitely includes this dish. Catfish pairs wonderfully with the key ingredients for creole food. Onion, celery and peppers form the base, spices, herbs and tomatoes are added to complete the flavor palette. A spicy, cheesy bite of corn muffin and sweetness and smokiness in each spoonful of black beans makes this dish hit all the spots!

Chicken Saltimbocca, with tortellini and roasted mini tomatoes

Spring is already in the air; the first hot days have already passed, and I am getting into a sunny mood. It brings me to a dish that I chose to make with chicken, as it pairs wonderfully with salty dried ham and fresh sage. The roasted mini tomatoes throw in sweet and tart in the mix while the tortellini bring that chewy, doughy soft texture to the party in your mouth. It's getting lit!
